Paperchain reveal & slow cooker chunky Mexican soup!

:: Cotton Paperchain Club! ::

The first Paperchain club went out this week and has been so well received, I'm chuffed to bits! Its been wonderful to see how you've used yours - there's been bunting, mini chains, Christmas shapes, balls, cushions - crocheted, knitted and even Tunision crocheted! I'm plain knitting mine, managed to do two so far! :D Can't wait to start on next months! 

This was an experiment which went a bit wrong but then turned out perfect! I made it in the slow cooker but I imagine would work on the hob too!

:: Ingredients ::

1 x can chopped tomatoes

1 x can black beans, drained

1 x can chopped tomatoes

1 x red pepper, chopped

1 x celery stick, chopped

1 x small red onion, chopped

1/2 cup brown rice

1 x cup frozen or canned sweetcorn

2 tsp chilli powder

1 tsp smoked paprika

1 tsp cumin

1 tsp coriander

1 tsp onion granules

2 or 3 garlic cloves, crushed (I used 1/2 tsp garlic powder for ease)

500ml vegetable stock plus water as needed

salt & pepper to taste

:: Method ::

Chuck everything in the slow cooker, stir, switch to low, cook for 6 hours ish! That's it! Keep an eye on the liquid, it may need a bit of extra water!

If cooking on the hob you might want to soften the veg and garlic (if using fresh) before adding everything else, it will need to simmer until rice is cooked.
